Reindeer Cupcakes

A favourite Christmas recipe from Lufthansa
Ingredients
240 g unsalted butter (at
room temperature)
420 g plain fl our
300 ml milk
2 eggs
3 tsp baking powder
400 g caster sugar
Pinch of salt, 4 tsp Lebkuchen
spice mix
140 g dark or milk chocolate
To decorate:
280 ml whipped cream
400 g dark chocolate
Salted pretzels
Jaffa Cakes for muzzles
Chocolate buttons for the
noses
White fondant icing
To prepare
- Mix together the fl our, baking powder, salt and spices. In a separate bowl cream the soft butter and sugar together and beat in the egg. Add the fl our mixture and milk alternately until the mixture is smooth. Finally fold in the
- pieces of chocolate.
- Divide the mixture between the muffi n cases (each to about 2/3rds full) and bake in a preheated oven at 180°C (Gas Mark 4) for approximately 25 minutes until well risen and lightly fi rm to the touch. Allow to cool.
- Heat the chocolate and cream in a saucepan over a low heat until the chocolate melts and then blend until smooth. Allow to cool slightly. Spread the mixture on top of the cupcakes and then conjure up a reindeer with the chocolate buttons, pretzels, fondant icing, Jaffa Cakes and lots of imagination!
